Peruvian cuisine stems from a real melting pot of many different cultures. The Spice Oil Roasted Garlic Huacatay, which is part of our Peruvian range, reflects this. Delicious huacatay leaf combined with roasted garlic, sweet peppers, cumin, chillies and paprika give this spice oil a truely unique Peruvian flavour.

Stir fry Use 3% Spice Oils on the total weight (rice, vegetables, meat) and add an extra flavour to suit your requirements in the form of Spice Mix del Mondo.
Mayonnaise 1kg mayonnaise with 40g Spice Oil (with 2 additional teaspoons Spice Mix del Mondo)
Butter 1kg butter with 40g Spice Oils (with 2 additional teaspoons Spice Mix del Mondo)
Dressing Replace some of the oil with a Spice Oil and mix together with a hand blender, (with additional Global Spice Mix) 50g vinegar, 120g of oil, 30g World Grill (with extra Spice Mix del Mondo)
Soups Just before serving, a few drops of Spice Oil on a soup gives a wonderful aroma and flavour.
Sauces Adding Spice Oils to a sauce can give a totally different dimension of colours and flavours. It is possible, at the beginning of cooking, to fry a shallot or onion in oil. Also, adding Spcie oils to fruits can give a warming flavour to your sauce. (This also applies to the Spice Mix del Mondo).
Grilling The Spice Oils are quite good to use both before and after grilling. After grilling, they give a nice shine and wonderful aroma.
Vegetables Vegetables can be given beautiful flavour, whether theyre blanched or raw. Spice Oils can be added after cooking, or before grilling or roasting.
Bread or pizza In the dough: reduce the fat (butter) in the recipe by 10-15% and replace it with Spice Oil or add 100/150ml to 1kg basic dough along with 20 grams of Spice Mix del Mondo.For baked bread, brushing with the World Grill and baking can make amazing crostinis.
Pastry Roll out the pastry, cover in Spice Oil and bake.Roll the pastry up tightly and cut into sections, cover the puff pastry with egg yolk and sprinkle with the Spice Mix del Mondo.
Potato Mix the Spice Oil (3% of the weight of the potato) with the par-boiled potato and then fry in the pan or oven.For wedges or chips. Brush Spice Oil onto rinsed potato slices and bake in the oven, along with a light dusting with the Spice Mix del Mondo.
Rice Mix the cooked rice with 2 or 3% World Grill and warm through.You can use the World Grills with risottos by adding 2/3% weight of the rice, along with Spice Mix del Mondo
Pasta Use the Spice Oil (2 to 3%) in the place of the oil you add. You can also heat the pasta with the World Grill and for serving, add a light dusting with the Spice Mix del Mondo.
