Nowadays, saffron is used much less than it used to be. You can use it for soups and sauces, but be careful when dosing. A little is usually enough. The spice is also used in French, Spanish and South American cuisine. The typical taste of paella comes from saffron.

Chefs tip: You only need 5 strands or so of saffron to add flavour and colour to a dish. For example, risotto; add 5 saffron strands to risotto and prepare as required.
